Ingredients
- Filo Pastry
- 25g Butter
- Potatoes
- Green Beans
- Eggs
- Double Cream
- Nutmeg
- Lancashire Cheese
Method
- Peal and boil the Potatoes (15 mins)
- Par-boil the trimmed Green Beans (5 mins)
- Layer a Filo sheet on a baking tray, brush with melted Butter
- Repeat for several more sheets
- Fold the edges over
- In a bowl, beat Eggs, Double Cream, grated Cheese, a little Nutmeg and season well
- Mash the Potatoes and add to the Egg mixture
- Pour this into the center of the Filo sheets
- Top with the Green Beans
- Bake @190C (20 mins)
- Serve with Salad

Ingredients
- 4 Portobello Mushrooms
- 1 Clove Garlic
- Parsley
- Gorgonzola Cheese
- Filo Pastry
Method
- Peel skin off Mushrooms, slice into large chunks and fry (10 mins)
- Add chopped Garlic and Parsley (3 mins)
- Layer 4 square Filo Sheets
- Put Mushroom mixture in middle, then top with Gorgonzola
- Spread egg wash (or Milk) along edges of pastry
- Pull pastry up to make a parcel
- Twist top to seal
- Bake @180C (20 mins)
- Serve with Green Salad

Ingredients
- Onion
- Garlic
- Spring Onion
- Parsley
- Spinach
- Eggs
- Ricotta
- Feta Cheese
- Parmesan
- Lemon Juice
- Nutmeg
Method
- Fry Onion (10 mins)
- Add Garlic, Spring Onion, Parsley (10 mins), set aside to cool
- In another pan wilt spinach (5 mins), allow to cool and pat dry
- Mix Eggs, Ricotta, Feta, Parmesan, Lemon and Nutmeg
- Add Spinach and add Onion Mix
- Line a greased dish with sheets of Filo
- Fill with mixture
- Scrunch up remaining Filo on top
- Bake @ 180ºC (40 mins)
