Ingredients
Pastry:
- Plain Flour
- Salt
- Butter
- White Wine Vinegar
- Egg
Filling:
- Onion
- Potato
- Sugar
- Stilton
- Gruyère
- Crème Fraiche
- Double Cream
- Nutmeg
Method
- Fry Onion, Sugar on a low heat (30 mins)
- Boil sliced Potato (10 mins)
- Combine Pastry ingredients and line a buttered dish with 2/3 of pastry and chill (20 mins)
- Bring Double Cream, Crème Fraiche, Nutmeg and Cheese to simmer
- Layer Potato, then onion then Cheese Sauce into pie dish and repeat
- Top pie with remaining 1/3 Pastry
- Brush eggs over lid and Bake @200ºC (25 mins)
- Serve with Salad

Ingredients
Pastry:
- 350g Plain Flour
- 200g Butter
- 1 egg
- Water
Filling:
- Mushrooms
- Leek
- Shallot
- Garlic
- Butter
- Flour
- Milk
- Vegetable Stock
- Double Cream
- Bay Leaf
- Thyme
Method
- For the pastry combine Flour, Butter and Eggs in food processor
- Add Water until mixture comes together and chill
- For filling fry Mushrooms and set aside to cool
- Fry Leek, Garlic and Shallot and set aside to cool
- For the sauce, add equal quantities of flour and butter to make a roux
- Add Milk, Vegetable Stock, Bay Leaf and Thyme and stir until smooth, simmer (15 mins)
- Remove Bay Leaf, add Double Cream and season
- Roll out the 2/3 of pastry and line dish
- Mix Sauce, Mushroom and Leeks, empty into pie dish
- Roll out remaining 1/3 pastry and place on top
- Bake in oven @180ºC (40 mins)

- Dark Ale (Guinness)
- Vegetable Stock
- Hendersons Relish
- Chestnuts
- Flour
- Blue Stilton Cheese
- Puff Pastry
Method
- In casserole dish, fry Onion, Carrot, Parsnip, Mushrooms, Thyme and Bay Leaf (15 mins)
- Add Chestnuts, Ale, Vegetable Stock and Hendersons Relish (5 mins)
- Add Flour and Blue Stilton Cheese
- Roll out pastry and place on top
- Bake 180°C (40 mins)
