Potato, Cheese & Onion Pie

Ingredients

Pastry:

  • Plain Flour
  • Salt
  • Butter
  • White Wine Vinegar
  • Egg

Filling:

  • Onion
  • Potato
  • Sugar
  • Stilton
  • Gruyère
  • Crème Fraiche
  • Double Cream
  • Nutmeg

Method

  1. Fry Onion, Sugar on a low heat (30 mins)
  2. Boil sliced Potato (10 mins)
  3. Combine Pastry ingredients and line a buttered dish with 2/3 of pastry and chill (20 mins)
  4. Bring Double Cream, Crème Fraiche, Nutmeg and Cheese to simmer
  5. Layer Potato, then onion then Cheese Sauce into pie dish and repeat
  6. Top pie with remaining 1/3 Pastry
  7. Brush eggs over lid and Bake @200ºC (25 mins)
  8. Serve with Salad

Leek and Mushroom Pie

Ingredients

Pastry:

  • 350g Plain Flour
  • 200g Butter
  • 1 egg
  • Water

Filling:

  • Mushrooms
  • Leek
  • Shallot
  • Garlic
  • Butter
  • Flour
  • Milk
  • Vegetable Stock
  • Double Cream
  • Bay Leaf
  • Thyme

Method

  1. For the pastry combine Flour, Butter and Eggs in food processor
  2. Add Water until mixture comes together and chill
  3. For filling fry Mushrooms and set aside to cool
  4. Fry Leek, Garlic and Shallot and set aside to cool
  5. For the sauce, add equal quantities of flour and butter to make a roux
  6. Add Milk, Vegetable Stock, Bay Leaf and Thyme and stir until smooth, simmer (15 mins)
  7. Remove Bay Leaf, add Double Cream and season
  8. Roll out the 2/3 of pastry and line dish
  9. Mix Sauce, Mushroom and Leeks, empty into pie dish
  10. Roll out remaining 1/3 pastry and place on top
  11. Bake in oven @180ºC (40 mins)

Chestnut, Stilton & Ale Pie

Ingredients

  • Onion
  • Mushrooms
  • Carrot
  • Parsnip
  • Thyme
  • Bay Leaf
  • Dark Ale (Guinness)
  • Vegetable Stock
  • Hendersons Relish
  • Chestnuts
  • Flour
  • Blue Stilton Cheese
  • Puff Pastry

Method

  1. In casserole dish, fry Onion, Carrot, Parsnip, Mushrooms, Thyme and Bay Leaf (15 mins)
  2. Add Chestnuts, Ale, Vegetable Stock and Hendersons Relish (5 mins)
  3. Add Flour and Blue Stilton Cheese
  4. Roll out pastry and place on top
  5. Bake 180°C (40 mins)
