Ingredients
- Salmon Fillets
- Lime
- Garlic
- Green Chilli (with seeds)
- Ginger
- 75g Butter
- Orange
- Avocado
- Pineapple
- Coriander Leaves
Method
- Finely chop Garlic, Ginger and Chilli
- Mix with Lime Zest and its Juice
- Marinade Fish (1 Hour)
- Remove Fish from Marinade (reserving marinade for sauce) and fry in oil and butter
- For Sauce, whiz the Marinade, Coriander Leaves and Butter in a blender until smooth
- Remove Fish, season and rest
- For Salad, segment Orange, peel, stone and slice the Avocado, peel and slice Pineapple
- Serve Fish with Salad and plenty of the Sauce

Ingredients
- Pineapple Slices
- 50g Butter
- 50g Light Brown Sugar
- Squeeze of Lime
Sponge:
- 125g Butter
- 125g Light Brown Sugar
- 2 Eggs
- Lemon Zest
- Vanilla Seeds
- Pinch Cinnamon Powder
- 125g Plain Flour
- 1 ½ tsp Backing Powder
- 1 tbsp Milk
Method
- Fry Pineapple Slices in Butter and Sugar (3 mins)
- Add Lime (1 min)
- Remove from pan from heat
- For sponge, mix Butter, Sugar & pinch Salt
- Add Eggs one at a time
- Add Flour, Baking Powder, Lemon Zest, Vanilla, Cinnamon & Milk
- Pour sponge mix on top of Pineapples
- Bake 180ºC (30 mins)
- When cool, put plate on top and turn over
- Serve with Vanilla Ice Cream and Syrup
