Ingredients
- 2 fillets of Smocked Haddock
- 800ml Milk
- 1 Onion
- 1 Bay Leaf
- 2 Cloves
- 1 tsp Black Peppercorns
- 500g Spinach
- 2 Tomatoes
- 1 tsp White Wine Vinegar
- Eggs
Sauce:
- 25g Butter
- 2 Shallots
- 4 Mushrooms
- 2 Sprigs of Thyme
- 1 Bay Leaf
- Glass of White Wine
- 500ml Fish Stock
- 150ml Double Cream
- Chives
Method
- For Sauce, over a low heat fry Shallots in Butter (5 mins)
- Add Mushrooms, Thyme and Bay Leaf and continue to fry (5 mins)
- Turn up the heat, add White Wine and reduce by half
- Add the Fish Stock and reduce by 2/3
- Finally add Double Cream and Chives, simmer (5 mins)
- For fish bring Milk, Onion, Bay Leaf, Cloves, and Peppercorns to near boiling point
- Gently place fish into milk (skin side up) and poach (5 mins)
- Remove fish and peal off the skin
- Meanwhile wilt the Spinach
- Place Tomatoes in boiling water, then remove skin and seeds, then chop into chunks
- Poach the Eggs in boiling water and White Wine Vinegar (3 mins)
- To Serve, place fish onto dish cover with Spinach, then the poached Egg
- Surround fish with Tomatoes and pour over plenty of Sauce
- You can serve with mash Potatoes – if your greedy like me

- Onion
- Garlic
- Ginger
- Madras Curry Powder (Turmeric, Coriander, Cumin, Chilli, Fenugreek)
- Chopped Tomatoes
- Chickpeas
- Spinach
- Coriander Leaves
- Chapati
Method
- Blend Onion, Garlic and Ginger in food process into a paste
- Fry in a little oil (10 mins)
- Add Curry Powder and continue to fry (2 mins)
- Add Tomatoes, season and simmer (5 mins)
- Add Chickpeas and continue to simmer (5 mins)
- Add Spinach and cook until wilted
- Serve with chopped Coriander Leaves and Chapati

Ingredients
- New Potatoes
- Plaice
- Lemon
- Butter
- Garlic
- Parsley
- Green Beans
- Spinach
Method
- Boil Potatoes (15 mins)
- Wrap Plaice and Lemon slices in Foil and Bake @180C (15 mins)
- Meanwhile on a low heat melt mutter with Garlic (5 mins)
- Boil Green Beans (7 mins)
- Wilt Spinach (3 mins)
- Add Chopped Parsley to Butter and Garlic
- Squeeze Lemon into Butter and Garlic
- Layer Spinach on plate, then put Plaice on top
- Serve with Potatoes and Green Beans
- Pour over Sauce

Ingredients
- Onion
- Garlic
- Spring Onion
- Parsley
- Spinach
- Eggs
- Ricotta
- Feta Cheese
- Parmesan
- Lemon Juice
- Nutmeg
Method
- Fry Onion (10 mins)
- Add Garlic, Spring Onion, Parsley (10 mins), set aside to cool
- In another pan wilt spinach (5 mins), allow to cool and pat dry
- Mix Eggs, Ricotta, Feta, Parmesan, Lemon and Nutmeg
- Add Spinach and add Onion Mix
- Line a greased dish with sheets of Filo
- Fill with mixture
- Scrunch up remaining Filo on top
- Bake @ 180ºC (40 mins)
