Seafood Paella

Ingredients

  • Onion
  • Celery
  • Carrot
  • Garlic
  • Paella Rice
  • Turmeric
  • Chilli
  • Fish Stock
  • Seafood (Prawns, Mussels, Squid, Scallops)
  • Olives
  • Lemon
  • Parsley

Method

  1. Fry Onion (5 mins)
  2. Add chopped Carrot and Celery (5 mins)
  3. Add Garlic (2 mins)
  4. Add Paella Rice, Turmeric and Chilli (2 mins)
  5. Add Fish Stock and simmer (20 mins)
  6. Add Seafood and Olives, continue to simmer (10 mins)
  7. Squeeze over Lemon and sprinkle with Parsley

Scallops & Parsnips

Ingredients

  • Scallops
  • Lemon Juice
  • Parsley

Purée:

  • Parsnip
  • Butter
  • Double Cream

Method

  1. Boil Parsnip until soft
  2. Purée with Butter and Double Cream and Season
  3. Fry Scallops (5 mins)
  4. Layer Scallops on Purée
  5. Squeeze Lemon Juice over each Scallop
  6. Sprinkle over Parsley
