Bread & Butter Pudding

Ingredients

  • 1 litre Whole Milk
  • 4 Eggs
  • 75g Sugar
  • 1/2 tsp Vanilla
  • 1/2 tsp Ground Cardamom Seeds
  • 1/2 tsp Ground Nutmeg
  • White Bread
  • Butter
  • Sultanas
  • Almonds
  • Pistachios

Method

  1. Bring Milk to Boil and simmer (1 hour)
  2. Stir frequently to prevent skin from forming and milk sticking to bottom of pan
  3. Allow milk to cool
  4. Beat Eggs and Sugar together
  5. Whisk Milk into Eggs
  6. Add Vanilla, Cardamom and Nutmeg
  7. Butter oven dish and coat in Sugar
  8. Butter both sides of White Bread (remove crusts if you like)
  9. Layer Bread, then some Sultanas and then Milk Mixture
  10. Repeat layering until dish is full
  11. Sprinkle over Almonds and Pistachios
  12. Allow bread to soak (30 mins)
  13. Bake @200C (10 mins)

Aloo Gobi

Ingredients

  • Potato
  • Onion
  • Cumin Seeds
  • Cauliflower
  • Chilli
  • Garlic
  • Turmeric Powder
  • Coriander Powder
  • Mixed Nuts (walnut, cashew nut etc.)
  • Sugar
  • Water

Method

  1. Boil potatoes (10 mins)
  2. Fry Onion in oil with Cumin Seeds (5 mins)
  3. Add Cauliflower, Chilli and Garlic and continue to fry (5 mins)
  4. Add Turmeric and Coriander and Nuts
  5. Add a little Sugar to sweeten and Season
  6. Top up with water and simmer (20 mins)
  7. Serve with Rice or Chapatis

Pecan Brownies

Ingredients

  • 200g Butter
  • 200g Chocolate
  • 4 Eggs (medium)
  • 220g Light Brown Sugar
  • 120g Plain Flour
  • 220g Pecan Nuts

Method

Note: we use Silicon tins (easier than greasing and lining metal tins)

  1. Melt Butter and Chocolate in heatproof bowl over boiling water
  2. With Electric mixer, beat Eggs (2 mins)
  3. Add Sugar and beat again (6 mins)
  4. Allow Chocolate to cool
  5. Fold into to Eggs and Sugar (don’t over mix)
  6. Gradually add Flour and Nuts (again not over working)
  7. Pour into tin and Bake @180C (20 mins)
