Ingredients
- Tuna Steaks
- Tomatoes
- Coriander Leaves
- Mint Leave
- Spring Onions
- Black Olives
- Red Chilli
- Lemon Juice
- Lime Juice
Method
- Chop Tomatoes and Spring Onions in small pieces
- Finely chop Chilli, Coriander and Mint, add to the salsa
- Slice the Olives and stir into the salsa
- Add Lemon and Lime Juice and season well
- Fry Tuna Steak on a high heat (keep pink in the middle)
- Serve with plenty of Salsa

Ingredients
- Salmon Fillets
- Lime
- Garlic
- Green Chilli (with seeds)
- Ginger
- 75g Butter
- Orange
- Avocado
- Pineapple
- Coriander Leaves
Method
- Finely chop Garlic, Ginger and Chilli
- Mix with Lime Zest and its Juice
- Marinade Fish (1 Hour)
- Remove Fish from Marinade (reserving marinade for sauce) and fry in oil and butter
- For Sauce, whiz the Marinade, Coriander Leaves and Butter in a blender until smooth
- Remove Fish, season and rest
- For Salad, segment Orange, peel, stone and slice the Avocado, peel and slice Pineapple
- Serve Fish with Salad and plenty of the Sauce

Ingredients
- 300ml Milk
- Smoked Haddock
- 50g Butter
- Onion
- Garlic
- Chilli
- 50g Plain Flour
- Ground All Spice
- Lime Juice & Zest
- Carrots
Pastry:
- 200g Plain Flour
- 1 1/2 teaspoons Turmeric
- Salt
- 100g Butter
Method
- For Pastry, blend flour turmeric and salt in food processor
- Add cubes of butter
- With processors on, drizzle in cold water until mixture comes together
- Wrap in cling film and chill (20 mins)
- For filling, poach Fish in Milk (5 mins) then set aside to infuse
- On low heat fry Onion, Garlic and Chilli in Butter (10 mins)
- Add Flour and All Spice, fry (2 mins)
- Remove fish from Milk
- Gradually pour Milk into Onion mixture until smooth
- Add Lime Juice and Zest
- Carefully chop fish into large chunks and fold into mixture
- Leave mixture to cool
- Roll out pastry into 4 disks, spoon mixture into middle
- Fold over and crimp
- Bake @200c (20 mins)
- Serve with Carrots
