Tomato, Thyme & Goats Cheese Slice

Ingredients

• Puff Pastry
• Tomatoes
• Garlic Clove
• Goats Cheese
• Sprigs of Thyme

Method

1. Roll out pastry
2. Layer sliced Tomatoes
3. Bake @190C (15 mins)
4. Take out of the oven and sprinkle over chopped Garlic and Thyme
5. Layer sliced Goats Cheese over the top
6. Return to oven (10 mins)
7. Couldn’t be simpler (especially if you buy ready made Puff Pastry!)

Leek, Walnut & Goats Cheese Slice

Ingredients

• Leeks
• Lemon Thyme
• Lemon Juice
• Puff Pastry
• Walnuts
• Goats Cheese

Method

1. Fry Leeks with Lemon Thyme until soft
2. Add Lemon Juice and remove form heat to cool
3. Roll out Puff Pastry
4. Layer Leeks on top
5. Then Sprinkle with Walnuts and Goats Cheese
6. Season, and Bake @200C (20 mins)
7. Serve with Salad

Kale Speltotto

Ingredients

• Onion
• Garlic
• Pearl Barley (or Spelt)
• White Wine
• Vegetable Stock
• Leeks
• Kale
• Parmesan
• Goats Cheese

Method

1. Fry Onion and Garlic in Oil and Butter (5 mins)
2. Add Pearl Barley (2 mins)
3. Add Wine (1 mins)
4. Then Vegetable Stock, a little at a time (30 mins)
5. Meanwhile fry Leeks in Oil and Butter (10 mins)
6. Add Kale (5 mins)
7. Stir Leeks and Kale into Pearl Barley
8. Add Parmesan and season
9. Serve with Goats Cheese on top
