Ingredients
- Puff Pastry
- Tomatoes
- Garlic Clove
- Goats Cheese
- Sprigs of Thyme
Method
- Roll out pastry
- Layer sliced Tomatoes
- Bake @190C (15 mins)
- Take out of the oven and sprinkle over chopped Garlic and Thyme
- Layer sliced Goats Cheese over the top
- Return to oven (10 mins)
- Couldn’t be simpler (especially if you buy ready made Puff Pastry!)

Ingredients
- Leeks
- Lemon Thyme
- Lemon Juice
- Puff Pastry
- Walnuts
- Goats Cheese
Method
- Fry Leeks with Lemon Thyme until soft
- Add Lemon Juice and remove form heat to cool
- Roll out Puff Pastry
- Layer Leeks on top
- Then Sprinkle with Walnuts and Goats Cheese
- Season, and Bake @200C (20 mins)
- Serve with Salad

- Onion
- Garlic
- Pearl Barley (or Spelt)
- White Wine
- Vegetable Stock
- Leeks
- Kale
- Parmesan
- Goats Cheese
Method
- Fry Onion and Garlic in Oil and Butter (5 mins)
- Add Pearl Barley (2 mins)
- Add Wine (1 mins)
- Then Vegetable Stock, a little at a time (30 mins)
- Meanwhile fry Leeks in Oil and Butter (10 mins)
- Add Kale (5 mins)
- Stir Leeks and Kale into Pearl Barley
- Add Parmesan and season
- Serve with Goats Cheese on top
